My favorite soup growing up was what my mother called Hamburger Soup. I think the name came from a packet of McCormick seasonings that was obsolete by the early 90s. Since I never used that packet of seasoning I’ve played around with spices to get the taste I remember growing up. Here is my version of Hamburger Soup! You can easily adapt this recipe to your favorite flavor profile.
Hamburger Soup2 onions diced
4 large carrots sliced or chopped
4 ribs of celery sliced or chopped
6 glove of garlic minced
4-6 red skin potatoes chopped
2lbs grass-fed ground beef
25oz stewed tomatoes
26oz strained tomatoes*
12oz frozen butter beans**
12oz frozen mixed vegetables
12oz frozen blackeyed peas
2 quarts chicken stock
1 teaspoon thyme
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon oregano
1 teaspoon cayenne
1 teaspoon cinnamon
1 teaspoon ginger
Salt & pepper to taste
Sauté first five ingredients. Then add ground beef. When beef browned add tomatoes and chicken stock. Next add frozen veggies. Lastly add seasonings. Let simmer for a few hours till potatoes and veggies are done. Many times I transfer everything to my crockpot simmer till dinner.
*if you are out of tomatoes but have a good tomato pasta sauce you can substitute it easily.
** you can use your favorite frozen veggies. I use green beans/peas whatever I have on hand.
