First Sunday of 2021 -Healthy Dips

Guacamole, Black eyed pea dip,
and Hummas with veggies

I’m not great a food prepping but I am trying to eat a bit lighter than the heavy holiday foods I’ve been enjoying since Thanksgiving. This week’s lunches will be packed with fresh fruit, veggies, and healthy dips. Tonight we ate veggies & dips watching football and enjoying our last evening before back to school tomorrow!

I shared black eyed pea dip in an earlier post. Below are our favorite Hummus and Guacamole recipes.

INGREDIENTS:

2 cans organic chick peas (3 cups)

2/3 c tahini paste

4 Tablespoons olive oil

6 Tablespoons lemon juice (3 lemons)

4 garlic cloves

1 teaspoon salt

5 Tablespoons cold water

DIRECTIONS:

Mix all ingredients in a food processor and enjoy!

Guacamole

Adapted from Rosa Mexicano my favorite place to eat guacamole 🥑

INGREDIENTS:

• 1 tbsp white onion

• cilantro

• jalapeno

• 3 hass avocado

• 3 tbps diced tomato

• 2 tbs chopped cilantro

• Squeeze of one lime

DIRECTIONS:

In a mortar and pestle mash

1 tablespoon finely chopped white onion, 1 tablespoon chopped fresh cilantro, 2 teaspoon finely chopped jalapeño, and 1 teaspoon salt together until all the ingredients are well ground. Then set aside.

In a separate bowl add 3 tablespoons diced tomato, 2 tablespoons chopped fresh cilantro, and 1 tablespoon finely chopped white onion.

Next add the mortar and pestle mash into the bowl with the chopped veggies. Then add chunks of avocado. Squeeze juice of one lime. Mix well. Add additional cilantro and salt to taste.

When you store make sure it is in an airtight to keep it bright green.
