Pink Lemonade Pancakes 🥞
The day before Ash Wednesday is typically glutenous indulgence before the 40 days of lent. Today’s version is Keto Friendly, Allergy Friendly, and quite tasty.
Pancake Ingredients
• 1/4 cup ghee melted ( sub butter)
• 1/2 cup plain yogurt ( I used goat)
• 1 Tablespoon powdered Stevia
• 1/4 teaspoon salt
• 4 eggs
• 1/2 teaspoon vanilla extract
• 1/4 cup coconut flour
• 1/2 teaspoon baking powder.
Directions:
Wisk ghee, yogurt, stevia, salt, eggs, and vanilla still smooth. Slowly add coconut flour and baking powder.
Heat skillet and add a Tablespoon of ghee for cooking. Cook pancake. I used a heart shaped mold for Valentine’s Day which only made 4 large hearts ♥️
Pink Lemonade Topping
• 1/3 cup ghee (softened)
• 2 tbsp powdered stevia
• 1 tsp lemon zest
• 1 tsp fresh lemon juice
• 1 tbsp yogurt (I used plain goat yogurt)
• 1 pinch salt
• 2 strawberries chopped fine
Directions:
Place the ghee, stevia, lemon zest, lemon juice, yogurt, & salt in a mixing bowl. With a hand mixer blend still smooth. Chop strawberries fine. Fold strawberries into the mixture.
Assembly:
Once two pancakes were cooked I placed one on top of each other with the Pink Lemonade topping between the layers. It’s such a treat and doesn’t taste even slightly healthy 💕
