Yesterday I opened a can of pumpkin purée to make a pumpkin spice latte. So what to do with the rest? I’d made a pumpkin pie protein shake, pumpkin bisque, so why not pumpkin oatmeal. It feels like fall. Warm, yummy, and healthy.
Ingredients:
2 cups water
Pinch of salt
1 cup gluten free oatmeal
1/2 cup pumpkin purée
Scoop of vanilla protein powder
2 Tablespoons maple syrup
2 Tablespoons milk of your choice ( more if too thick) Lately I’m using oat milk with protein
1 Teaspoon Pumpkin Pie Spice- could add more as a topping too if you want more
Toppings:
Fresh apple chopped
Pumpkin Seeds
Hemp Harts for extra protein
Could add favorite nuts if able

Directions:
Cook oatmeal by directions on package. I typically double the water to oatmeal and add a pinch of salt. When the water boils stir in the oatmeal into the salted water. Stir and reduce heat. Add pumpkin, milk, maple syrup, protein powder, and pumpkin spice.
