Allergy Friendly Keto Taco Soup

Here it is!!! The most requested recipe from my FB & IG account recently! Easy to make in the Instapot or on the Stovetop!

This quick soup has so many options to incorporate your favorite taco toppings!

Ingredients:

2 pounds grass-fed ground beef

1 onion yellow chopped

4 cloves garlic minced

2 tablespoons chili powder

2 teaspoons cumin

8 ounces goat cream cheese

20 ounces diced tomatoes with chilies (Rotel)

32 ounces beef bone broth

1/2 cup plain goat yogurt

salt & pepper to taste

I used the sauté feature on the instapot to cook everything. Then I used the slow cooker feature to keep it warm until we were ready to eat. You can easily use the stovetop or even a crockpot. Seriously this is so versatile!

Sauté onion once translucent add garlic and ground beef. Once the ground beef is no longer red add spice. Next add Rotel tomatoes and beef broth. After 30 minutes stir in the cream cheese and yogurt. If you don’t have food allergies sour cream and cream cheese can be used. Salt and pepper to taste.

So this soup is a great base for your favorite topping like corn chips, sour cream, shredded cheese, jalapeños, avocado, chopped bacon, green onions, cilantro, olives….the possibilities are endless!
