It’s a cold March evening which calls for something warm and yummy. Today our organic chicken arrived from Azure Standard so Chicken and Dumplings filled the bill!
Chicken- either one whole fryer or 4-6 chicken breast
1 onion chopped
3 large carrots
3 ribs of celery
3 glove of garlic
1-2 Tablespoons of olive oil
Salt & pepper to taste
1 recipe of biscuits dough Here
I start chicken first- whole chicken covered in water, salt, pepper and boil one hour saving broth for soup base.
Sauté vegetables in olive oil. Then add to broth.
Take chicken off bone and add back to broth. Bring to a boil.
Roll out the biscuit dough 1/8″ thin. Cut the dough into approximately 1″ squares. These were hand cut by my sweet five year old 💜
With the broth boiling with vegetables and chicken add the Dumplings a few at a time. Then turn flame down and simmer for 5 minutes.
Scoop up and enjoy!
