First Harvest

First harvest is a funny title for this blog. I’m not sure 3 large banana peppers is actually a harvest 🙈. None the less the first fruits of our labor May 1st were ready to be picked. The three did not last long. More from the garden soon. In the meantime enjoy the pictures and recipe.

Stuffed Banana Peppers

3 Large banana peppers cut in half lengthwise and seeded

2 T plain goat yogurt

2 T goat cream cheese

2 T pecorino romano  (sheep) plus some to sprinkle on top just before baking.

1 garlic clove pressed or smashed

1 t fresh rosemary

Salt & pepper to taste
Directions
Preheat oven 400*
Grease a small baking dish
In a mixing bowl cream the yogurt, cream cheese, pecorino, garlic, rosemary, salt & pepper.
Fill the pepper halves with the creamed mixture. Sprinkle pecorino on top.
Bake 15 minutes at 400*

Then Broil till golden & bubbly
