Easy Soup

This is the easiest soup recipe! You can use whatever you have on hand. I start all soups with onions, garlic, carrots, & celery. Then add a pound of meat, frozen veggies (or canned), broth ( or water) and seasoning! This recipe is so forgiving and adaptable! I’d love to hear your favorite version!

Tonight’s version of Easy Soup has a pound of frozen spicy chicken sausage, frozen beef broth from a roast, onions, garlic, carrots, celery, potatoes, frozen peas/ beans.

Easy soup

2 Tablespoons olive oil

1 onions chopped

2 gloves garlic minced

6 ribs celery chopped

6 large carrots chopped

1- 16oz spicy chicken sausage (can use a pound of any kind of meat you have on hand)

32 oz stock of your choice ( I used frozen beef stock leftover from a roast)

1-6oz can tomato paste ( can use tomatoes or tomato sauce)

6 new potatoes chopped ( any potato is fine)

1- 12 oz bag frozen purple hull peas

1- 12oz bag frozen butter beans

(Any veggies you like)!!

Seasoning- again use your favorites!

1 teaspoon garlic powder

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon chili powder

1 teaspoon ground ginger

1 teaspoon ground cumin

1 teaspoon ground cinnamon

1 teaspoon salt

1 teaspoon pepper

Sauté in olive oil onions, garlic, celery, and carrots.

Then add chicken sausage.

Next add broth, tomato paste, and potatoes.

Cook 30 minutes or until potatoes are tender.

Next add seasoning. Turn down to simmer for an hour or till you are ready to serve. If soup gets to thick add water one cup at a time.
