Grass fed veggie Chili 

After a week of indulging on vacation I was craving veggies and grass fed beef. The garden was full of peppers and tomatoes so chili it is! So here is a quick nutrient dense dinner. 


Grass fed beef & veggie chili


Ingredients:

2 lbs grassfed beef

2 Tablespoons olive oil 

2 organic zucchini sliced & quartered 

2 organic onions chopped 

6 organic carrots slice & quartered

1 bunch organic celery sliced 

4 gloves if garlic minced 

4 banana peppers (garden) chopped 

2 jalapeño peppers (garden) chopped 

4 tomato (from the garden) chopped 

1 box -Pomi 26.46oz crushed tomatoes 

1 box- Pomi 26.46oz chopped tomatoes 

2 Teaspoons chili powder

2 Teaspoons cumin

2 Teaspoons cinnamon 

Salt & Pepper to taste


Sauté veggies & grass fed beef in 2 Tablespoons of olive oil. Then simmer 45 minutes. While veggies simmer 45 minutes cook rice. I used Two Brooks Farm Missimati Bayou Bouquet Brown Rice Basmati. 


When the veggies are tender add the tomatoes and seasonings. Simmer another 20 minutes.
