Protein Chocolate Chip Granola Bars

These Protein Chocolate Chip Granola Bars are so good they will not last long in your house! I was looking for a granola bar with more protein without table sugar. I chose unsweetened coconut and a plant based vanilla protein shake powder with 15 grams of protein without sugar, gluten, soy, dairy, nuts, or fillers. The chocolate chips are allergy friendly and the honey is raw. Seeking the best ingredients for our allergies is very important.

I played around Sunday afternoon until I got the right consistency for the bars. My family loved them! I kept them in the refrigerator thinking out of sight they’d last longer but that didn’t really work. We ate them just as fast as if they were on the counter! Tonight I made another batch hoping we can make it to the end of the week. They are great to put in the lunchbox or before the after school activities.

Ingredients

2 cups gluten free rolled oats

1/2 cup vanillas protein powder

1/2 cup shredded coconut

1/4 cup flaxseed meal

1/2 cup sunflower seed butter

1/2 cup ghee

1/2 cup tahini paste

1/2 cup honey

1/2 cup chocolate chips

Mix the first four ingredients in a mixing bowl.

Melt the next four ingredients.

Stir the melted ingredients into the mixing bowl making sure to incorporate everything. Make sure the mixture is fairly cool then add chocolate chips. If you add the chocolate chips while it is too warm they will melt.

Pour into 8×8 dish that’s been greased or has parchment paper. Press down evenly.

Chill 2 hours in the refrigerator. Cut into bars. Keep in a sealed container either on the counter or in the refrigerator.

It made 12 bars which only lasted 3 days in my house 🤣
